This is a simple cake that features rum as it only flavouring. The cake can be used as a dessert or a snack when friends come around.


Serves: 6 

  • 1 1/4 cups (155g) plain flour
  • 3/4 cups (185g) caster sugar
  • 3 eggs
  • 2 tablespoons rum
  • 2 cups (500ml) milk

  1. In a large bowl combine the sugar with the eggs then add the rum.
  2. Add the flour in one batch. Whisk until smooth.
  3. Gradually stir in milk.
  4. Preheat oven to 150 degrees C.
  5. Butter a pie dish about 5 cm high. Sprinkle with flour.
  6. Pour the batter into the pie dish and bake until the cake is brown or about 1 hour.
