    Chicken breasts are covered in mayonnaise and wholegrain mustard before being sautéed. Serve with white rice, beans or even snow peas.

    Serves: 2 

    • 2 limes, juice only
    • 2 tablespoons mayonnaise
    • 2 tablespoons wholegrain mustard
    • 4 chicken breasts
    • 1 tablespoon olive oil
    • 1 pinch salt and pepper, to taste

    1. Squeeze two limes and keep the pulp but not the pips.
    2. Spread the mayonnaise and wholegrain mustard on the chicken breasts.
    3. Heat the olive oil in a frying pan over medium heat and cook the chicken breasts for 15 minutes or until done.
    4. Pour the lime juice and lime pulp into the pan and cook for 3 minutes. Do not cook too long ensuring you still have some lime juice left in the pan. Serve.

    Wasn't impressed with this at all. The lime was just too sour - it might've been better with more mayonnaise, but then we were also unsure on how well the whole grain mustard and the lime juice went. Won't be making it again. - 14 Aug 2015
