Mock Lemon Curd

    Unlike normal lemon curd this one is not made with butter; it is a lighter and faster version. It can be applied to other recipes that require lemon curd.

    Serves: 6 

    • 2/3 cup (155g) caster sugar
    • 3 eggs
    • 100ml lemon juice,
    • 2 teaspoons lemon essence
    • 1 tablespoon cornflour

    1. In a large microwavable bowl add the sugar, eggs, lemon juice, lemon essence and cornflour. Whisk well to avoid getting lumps in the mixture.
    2. Cook for 1 minute in the microwave (no more than 800W) then remove and whisk again.
    3. Cook 2 more times for 1 minute whisking between each. By the end the mixture should be creamy; if it looks like a flan then it is overcooked.
    4. Use the lemon curd as required.
