Place meat in a bowl and marinate for 1 hour in lemon juice, garlic, chilli, thyme, bay leaf, salt and pepper. Drain meat.
Heat the oil in a frypan over medium heat and cook the meat for 5 minutes or until brown. Add the onions, Colombo spice mix, eggplant and enough water to cover the meat. Simmer for 1 hour. Adjust seasoning and serve hot.
