This is a quick, easy and cheap lamb casserole. Colombo is a spice mix from the Caribbean similar to a curry powder.


Serves: 6 

  • 1kg lamb shoulder, cubed
  • 4 lemons, juiced
  • 2 garlic cloves, crushed
  • ½ teaspoon chilli
  • 5 thyme sprigs
  • 2 bay leaves
  • 1 pinch salt and pepper, to taste
  • 2 tablespoons oil
  • 2 onions, diced
  • 100g colombo spice powder
  • 2 eggplants, diced

Preparation:30min  ›  Cook:1hour  ›  Ready in:1hour30min 

  1. Place meat in a bowl and marinate for 1 hour in lemon juice, garlic, chilli, thyme, bay leaf, salt and pepper. Drain meat.
  2. Heat the oil in a frypan over medium heat and cook the meat for 5 minutes or until brown. Add the onions, Colombo spice mix, eggplant and enough water to cover the meat. Simmer for 1 hour. Adjust seasoning and serve hot.
