    This is a great lamb and vegetable tajine that is cooked over two hours creating a beautiful casserole style dish.

    Serves: 6 

    • 1kg lamb shoulder, cut into large cubes
    • 3 tablespoons olive oil
    • 3 large onions, quartered
    • 3 turnips, cubed
    • 3 carrots, sliced
    • 4 tomatoes, diced
    • 1 pinch cayenne pepper, to taste
    • 1 pinch salt and pepper, to taste
    • 200g sultanas

    1. Cook the lamb in a saucepan with the oil over high heat.
    2. Add all the vegetables, cayenne pepper. Season with salt and pepper. Add a glass of water. Cover and simmer over low heat for one hour.
    3. Stir in the sultanas, add more water if it is too dry and cook for another hour.
