Lamb and Coriander Curry

    The lamb is so tender in this beautifully spicy curry that is finished with cream. Serve hot with rice or couscous.

    Serves: 6 

    • 3 tablespoons olive oil
    • 1kg lamb shoulder, cut into pieces
    • 3 onions, diced
    • 5 tomatoes, diced
    • 2 garlic cloves, crushed
    • 2 tablespoons curry powder
    • 1 teaspoon paprika
    • 1 pinch salt and pepper, to taste
    • 2 cups (500ml) water
    • 25g coriander, diced
    • 150ml thickened cream

    1. Heat the oil in a large saucepan over medium heat. Add the meat and onions and saute for a few minutes.
    2. Stir in the tomatoes, garlic, curry and paprika. Season with salt and pepper. Mix well.
    3. Add water and simmer for 1 1/4 hours. Stir in the coriander and cook for another 15 minutes.
    4. Add the cream and serve immediately.
