Surprise Almond Pie

    This is a French almond pie known as a 'Frangipane'; this recipe includes a trinket hidden in it making it even more appealing for kids to eat.

    Serves: 6 

    • 125g butter, softened
    • 2 eggs
    • 110g icing sugar
    • 110g almond meal
    • 2 teaspoon cornflour
    • 2 tablespoons Kirsch
    • 2 puff pastry sheets
    • 1 trinket
    • 1 egg yolk

    1. Preheat oven to 240 degrees C.
    2. Mix the butter, whole eggs, icing sugar, almond meal, cornflour and kirsch in a bowl.
    3. Line a buttered pie dish with a sheet of puff pastry then add in the almond mixture.
    4. Hide the trinket in the almond mixture and cover with the second pastry. Press the edges to seal the cake.
    5. Brush the cake with the egg yolk and bake in the oven for 35 minutes.
