Pear and Chocolate Frangipane

This is a quick and easy tart to bake using a puff pastry base coated with chocolate then filled with a sweet almond mixture and pears to create a wonderful frangipane.

- 125g butter, softened
- 1 1/4 cups (125g) almond meal
- 1/2 cup (125g) caster sugar
- 3 eggs
- 1 puff pastry sheet
- 120g cooking chocolate
- 4 ripe pears, peeled and halved

- Preheat oven to 180 degrees C.
- In a bowl mix the softened butter with the almond meal and sugar until smooth. Add the eggs one at a time mixing well after each egg.
- Line a buttered pie dish with the puff pastry sheet.
- Melt the chocolate in a water bath then use it to coat the puff pastry sheet.
- Top the chocolate coated pie shell with the almond mixture then add the pears.
- Bake for 30 minutes.
