Pear and Chocolate Frangipane

    This is a quick and easy tart to bake using a puff pastry base coated with chocolate then filled with a sweet almond mixture and pears to create a wonderful frangipane.

    Serves: 6 

    • 125g butter, softened
    • 1 1/4 cups (125g) almond meal
    • 1/2 cup (125g) caster sugar
    • 3 eggs
    • 1 puff pastry sheet
    • 120g cooking chocolate
    • 4 ripe pears, peeled and halved

    1. Preheat oven to 180 degrees C.
    2. In a bowl mix the softened butter with the almond meal and sugar until smooth. Add the eggs one at a time mixing well after each egg.
    3. Line a buttered pie dish with the puff pastry sheet.
    4. Melt the chocolate in a water bath then use it to coat the puff pastry sheet.
    5. Top the chocolate coated pie shell with the almond mixture then add the pears.
    6. Bake for 30 minutes.
