Chocolate and Almond Pie

    This is a simple pie that my kids love; it uses a puff pastry crust filled with a layer of almond and a layer of chocolate.

    Serves: 6 

    • 140g cooking chocolate
    • 100g butter, softened
    • 1/3 cup (90g) caster sugar
    • 100g almond meal
    • 3 whole eggs
    • 2 puff pastry sheets
    • 1 egg yolk

    1. Preheat the oven on 200 degrees C.
    2. Melt the chocolate in a water bath. Add the softened butter and stir until smooth.
    3. Combine the sugar with the almond meal in a bowl then add the eggs one by one and stir well after each egg.
    4. Line a pie dish with one of the puff pastry sheets. Add the almond meal mixture then pour over the chocolate mixture. Cover with the second puff pastry sheet. Seal the edges of the dough with warm water if necessary.
    5. Brush the cake with the egg yolk. With a knife score the pastry in a criss-cross pattern being careful not to make any holes in the dough.
    6. Bake in the oven for 30 minutes.
