    I have great childhood memories of pineapple fritters from the local fish and chip shop; unfortunately that shop is not there anymore so now I have to make my own. You can batter any fruit with this recipe.

    Ingredients
    Serves: 8 

    • 2 cups (250g) plain flour
    • 1 teaspoon salt
    • 2 eggs
    • 2 tablespoons oil
    • 2 tablespoons sugar
    • 1 cup (250ml) milk
    • about 3 cups (750ml) oil for deep frying
    • 3 pieces of fruit, e.g. apple, pineapple, banana or pear, sliced

    1. Mix the flour and salt in a bowl.
    2. Add an egg in the centre of the dry ingredients. Mix with a little bit of flour then add the second egg. Mix again with more flour. Add oil and sugar.
    3. Gradually add the milk. Mix until smooth and with no lumps. Set the batter aside for at least one hour.
    4. Heat the oil in a deep fryer or saucepan.
    5. Coat the fruit with the batter and add into the hot oil for 3 minutes.
    6. Drain and place on paper towel then sprinkle with the icing sugar.
