Chocolate Chip Cookies with Dark Chocolate

    These chocolate chip cookies are perfect for dunking in hot chocolate while watching the latest kid's movie with the family.

    Serves: 4 

    • 110g butter, softened
    • 1/3 cup (90g) caster sugar
    • 3/4 cup (125g) brown sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 1/2 teaspoon bicarb soda
    • 1 teaspoon hot water
    • 1 pinch salt, to taste
    • 1 1/2 cups (185g) plain flour
    • 175g dark chocolate chips

    1. Preheat the oven to 180 degrees C.
    2. Mix the butter, caster sugar and brown sugar until smooth. Add the egg and vanilla essence.
    3. Dissolve the bicarb soda into the hot water.
    4. Add the bicarb soda mixture to the sugar mixture then add the salt, flour and chocolate chips; mix.
    5. Drop a spoonful of dough onto an ungreased baking tray.
    6. Bake in the preheated oven for 10 minutes.

    This is a beautiful recipe. Nice and buttery and chewy, not crumbly or hard at all. I used m&m's on mine instead of dark chocolate. I would also suggest a teaspoon ful of mixture when making a the cookies. I made 17 huge ones by using a tablespoon for each cookie. For kids, a teaspoon would make about 25 normal sized cookies.  -  27 Jun 2013
