Classic Ratatouille

    The movie Ratatouille has been great for my kids loving this healthy vegetable stew, even better it is super easy to make, a mother's ideal dinner.

    Serves: 8 

    • 4 tablespoons olive oil
    • 3 garlic cloves, crushed
    • 3 onions, finely diced
    • 3 eggplants, diced
    • 6 zucchinis, diced
    • 3 red capsicums, diced
    • 1 (400g) tin crushed tomatoes or passata
    • salt and pepper, to taste
    • 50g basil, diced

    Preparation:20min  ›  Cook:50min  ›  Ready in:1hour10min 

    1. Heat the oil in a large saucepan over medium heat. Sauté the garlic and the onions.
    2. Add the eggplant, zucchini and capsicum to the saucepan and simmer over low heat for 30 minutes stirring from time to time.
    3. Add the tomatoes and cook another 10 minutes.
    4. Season with salt and pepper. Sprinkle with fresh basil before serving.
