Chocolate Turkish Delight

    These are a very unusual Turkish delight as they contain chocolate; traditionally they use rose water or other delicate sweet flavours. This is the chocolate lover’s version.

    Serves: 8 

    • 2 eggs
    • 75g milk powder (or 25 ml milk)
    • 1 lemon, juiced
    • 1kg sugar cubes
    • 100g cooking chocolate, grated
    • 1 cup (125g) cornflour
    • 3 drops orange flower water, optional
    • icing sugar or cocoa powder, if desired

    1. Separate egg yolks and whites. Whisk the egg whites until stiff.
    2. In a saucepan add 1 1/2 litres of water, milk, lemon juice, sugar cubes, grated chocolate and egg whites.
    3. Bring to the boil, stir well to dissolve sugar and simmer for 5 minutes then skim off the foam and bring to the boil once again.
    4. Combine the cornflour with 25ml of cold water. Add the cornflour mixture and the chocolate mixture to the hot sugar mixture stirring until thickened. A drop of the mixture should then stick then slowly slip away.
    5. Add the orange flower water if desired. Pour this mixture into a rectangular dish.
    6. Leave to cool down then sprinkle with icing sugar or cocoa powder, to taste. Dice the Turkish delights and cut them in 2 or 3 cm cubes. Sprinkle again and serve.
