This is a family favourite where a glass has a layer of crushed biscuit at its base then a sweet chocolate mousse layered on top, decorate as desired to serve.


Serves: 8 

  • 250g cooking chocolate, broken
  • 50g salted butter
  • 7 eggs
  • 70g caster sugar
  • 2 tablespoons creme fraiche
  • 1 pinch salt, to taste
  • 8 plain sweet biscuits (1 per glass)

  1. Add the chocolate and butter to a microwavable bowl. Heat in the microwave for one or one and a half minute. Whisk until smooth.
  2. Set aside to cool.
  3. Separate the egg whites from the yolks.
  4. Whisk the yolks with the sugar in a bowl for a minute then add the creme fraiche.
  5. Add a pinch of salt to a bowl then add the egg whites and whisk the egg whites until stiff. If you use a mixer, whisk for 2 minutes.
  6. Add the chocolate mixture to the egg yolks mixture and stir.
  7. Add a spoonful of egg whites to the chocolate mixture and stir quickly.
  8. Gently stir in the remaining egg whites.
  9. Crush the biscuits and transfer in equal proportions into each glass.
  10. Pour the mousse over the biscuits.
  11. Refrigerate for at least 3 hours.
