Salmon Salad

    This is an easy salad to make with minimal cutting yet is a filling and healthy meal with nuts, cheese and salmon.

    Serves: 4 

    • 50g green salad per person
    • 100g cherry tomatoes
    • 75g pine nuts
    • 75g cashew, roasted, salted
    • 1 red capsicum, diced
    • 250g blue cheese, diced
    • 250g smoked salmon, cut into strips

    1. Add the green salad to a large serving bowl.
    2. Add the tomatoes, nuts, red capsicum and cheese then lightly mix.
    3. Finally add the salmon to serve.

    Very nice!! To improve I would suggest using 100g of blue cheese but apart from that 5 starts  -  07 Aug 2012  (Review from Allrecipes UK & Ireland)
