This is an easy salad to make with minimal cutting yet is a filling and healthy meal with nuts, cheese and salmon.
50g green salad per person
100g cherry tomatoes
75g pine nuts
75g cashew, roasted, salted
1 red capsicum, diced
250g blue cheese, diced
250g smoked salmon, cut into strips
- Add the green salad to a large serving bowl.
- Add the tomatoes, nuts, red capsicum and cheese then lightly mix.
- Finally add the salmon to serve.
