Creamy Coffee Dessert

    This is the perfect dessert for coffee lovers known in France as a 'cafe liegois', good coffee is topped with coffee ice cream and whipped cream.

    Serves: 6 

    • 300ml espresso or very strong coffee, unsweetened, very cold
    • 500ml thickened cream, very cold
    • 25g icing sugar
    • 1 tablespoon vanilla sugar or 1 teaspoon of vanilla essence
    • 500ml coffee ice cream

    1. Prepare the espresso. Pour 300 ml of coffee into a cup, cool for a few minutes then refrigerate for at least 1 hour.
    2. Put a glass bowl in the freezer for approximately 30 minutes; the glass bowl should be very cold.
    3. Take the bowl out of the freezer and add the cream into the cold bowl. Whip the cream. When peaks start to form add the icing and vanilla sugar. Whisk until very firm.
    4. Pour the coffee into the glasses in equal parts. Add the coffee ice cream and top with whipped cream.
