Broccoli and Cheese Quiche

This is a healthy and easy to make quiche that makes a great lunch or light dinner when served with a salad.


Serves: 6 

  • 1 shortcrust pastry sheet
  • 1 head broccoli
  • 4 eggs
  • 200ml cream
  • 1 pinch salt and pepper, to taste
  • 1 teaspoon ground nutmeg
  • 1 teaspoon dry thyme
  • 1 teaspoon dry basil
  • 100g grated cheese

Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

  1. Preheat oven to 180 degrees C.
  2. Line a pie dish with the shortcrust pastry. Prick the dough with a fork. Line with the pastry with baking paper. Add dry beans and cook in the oven for 10 minutes. Remove the paper and beans.
  3. Cut the broccoli into small florets. Blanch for 5 minutes in salted water.
  4. Whisk the eggs with the cream in a bowl. Season with salt, pepper, nutmeg, thyme and basil. Add the cheese and mix.
  5. Arrange broccoli in the pie dish. Pour in the egg and cream mixture then cook for 30 minutes.
