    If two cheeses are better than one, then three cheeses must be better than two. You can experiment with different cheeses like Pecorino Romano or feta cheese and the result will be just as good.

    Ingredients
    Serves: 6 

    • 1kg broccoli
    • 5 eggs
    • 1 cup (250ml) full-fat milk
    • 250ml creme fraiche
    • 220g Gruyere, grated
    • 220g Parmesan, grated
    • 220g cheddar, grated
    • 1 pinch salt and pepper to taste
    • 150g breadcrumbs

    1. Preheat oven to 240 degrees C.
    2. Wash the broccoli and cut into florets. Steam or cook in lightly salted water for about 5 minutes. The broccoli should be tender but still slightly crunchy.
    3. Meanwhile, in a large bowl whisk the eggs with milk, cream, grated cheeses, salt and pepper.
    4. Arrange the broccoli in a buttered dish, cover with egg-cheese mixture and sprinkle with breadcrumbs.
    5. Bake in the oven for about 45 minutes or until the gratin is brown.
