Blueberry and Lime Jam

    Making jam can be a great family activity. Picking the berries from a farm, making the jam and then eating it for breakfast.

    Serves: 60 

    • 2 limes, juiced and zested
    • 1kg blueberries, washed
    • 2 1/4 cups (560g) caster sugar

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Zest the limes and then squeeze them to get the juice.
    2. In a large saucepan place the blueberries, sugar, lime zest and lime juice.
    3. Bring to the boil stirring gently with a wooden spoon; do not crush the blueberries. Cook over medium heat for 30 minutes, stirring very often because the jam might otherwise stick to the bottom.
    4. Pour a teaspoon of jam onto a cold plate; the jam is done when it wrinkles when pushed with your finger.
    5. Fill the jars with the jam (The jars first need to be boiled in hot water), wipe the edges and close the jars tightly.
