Simple Vegetable Soup

    This is a very simple old fashion vegetable soup, the secret is in the stock; good stock equals good soup. The best stock is homemade, if you have the time.

    Ingredients
    Serves: 8 

    • 1 large onion, diced
    • 2 leeks, diced
    • 5 carrots, diced
    • 3 sticks celery, diced
    • 1 large or 2 small turnips, diced
    • 1 tablespoon olive oil
    • 1 pinch salt and pepper, to taste
    • 2 litres of stock (beef, vegetable or poultry)
    • 1 bouquet garni (thyme, bay leaves and parsley)

    Preparation:5min  ›  Cook:20min  ›  Ready in:25min 

    1. Sauté diced vegetables in olive oil in a large saucepan for at least 5 minutes over medium heat. Season with salt and pepper.
    2. Add stock and bouquet garni then simmer over low heat for about 20 minutes.
    3. Remove the bouquet garni and put the soup in a blender and puree or use a hand blender and puree directly in the saucepan.
    4. Serve immediately.
