This is a simple apricot compote that will use up your surplus apricots to create a wonderful sweet treat that can be frozen and used when desired.


Serves: 4 

  • 12 apricots
  • 30g butter
  • 10ml apricot brandy
  • 80g white sugar

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Wash the apricots, remove the stones and cut them into small pieces.
  2. Melt the butter in a saucepan over medium heat. Add the apricots, apricot brandy and sugar. Cover and cook on low heat for 10 minutes.
  3. Remove from heat and put the mixture through a vegetable mill. Pour the compote into a bowl. Cool for a few minutes and refrigerate.
