Apricot and Almond Pie

When apricots are in season I love to make this pie that uses almond meal in the custard filling to give is a slight nutty taste.

Ingredients
Serves: 6
- 500g apricots
- 1 ready made puff pastry sheet
- 125g almond meal
- 100g caster sugar
- 1 egg, whisked
- 100g butter
- 1 tablespoon vanilla sugar

- Preheat the oven to 200 degrees C.
- Cut the apricots into small pieces.
- Butter and coat a pie tin with flour then line the pie tin with the puff pastry sheet.
- Melt the butter into a saucepan over medium heat. Pour it into a bowl. Add the sugar, lightly whisked egg and vanilla sugar; mix.
- Sprinkle the almond meal onto the pastry base. Layer the apricots in the pie shell then pour the egg mixture over the apricots.
- Bake in the oven for approximately 30 minutes.
