When apricots are in season I love to make this pie that uses almond meal in the custard filling to give is a slight nutty taste.


Serves: 6 

  • 500g apricots
  • 1 ready made puff pastry sheet
  • 125g almond meal
  • 100g caster sugar
  • 1 egg, whisked
  • 100g butter
  • 1 tablespoon vanilla sugar

  1. Preheat the oven to 200 degrees C.
  2. Cut the apricots into small pieces.
  3. Butter and coat a pie tin with flour then line the pie tin with the puff pastry sheet.
  4. Melt the butter into a saucepan over medium heat. Pour it into a bowl. Add the sugar, lightly whisked egg and vanilla sugar; mix.
  5. Sprinkle the almond meal onto the pastry base. Layer the apricots in the pie shell then pour the egg mixture over the apricots.
  6. Bake in the oven for approximately 30 minutes.
