African Style Chicken Stew

    This unique chicken stew flavour comes from the African influence through the use of chickpeas, peanut butter, curry powder and coriander.

    Serves: 6 

    • 2 tablespoons olive oil
    • 1 garlic clove, minced
    • 6 chicken breasts, cubed
    • 2 tablespoons curry powder
    • 1 pinch salt and pepper, to taste
    • 500ml tomato puree or passata
    • 1 (425g) tin chickpeas, rinsed and drained
    • 4 tablespoons peanut butter
    • 50g fresh coriander, only take the leaves

    1. Add the olive oil to a large saucepan and brown the garlic for a few seconds.
    2. Add the diced chicken and cook over medium heat for 5 minutes; stirring constantly.
    3. Sprinkle the curry powder, salt and pepper. Add the tomato puree, chickpeas, peanut butter and simmer over low heat for about 25 min.
    4. Add coriander, keeping some sprigs for garnish; cook for 5 minutes. If the sauce is too thick add a few tablespoons of water.
    5. Adjust the seasoning then garnish with coriander and serve immediately with white rice.
