Potato and Watercress Soup

    The subtle watercress flavours are combined with the bulk of potatoes and creaminess of creme fraiche to create this delicate soup.

    Serves: 4 

    • 200g watercress leaves
    • 4 potatoes
    • 1 cup (250ml) creme fraiche
    • 1 tablespoon butter

    1. Wash the watercress leaves then peel the potatoes and dice.
    2. Heat the butter in a saucepan over medium heat then add the watercress and potatoes; cook for 5 minutes.
    3. Season with salt and pepper then add one litre of water and simmer for 20 minutes over medium heat.
    4. Put the soup in a blender or use a hand mixer to mix the soup.
    5. Stir in the creme fraiche.
