Raspberry Puree

    This is a versatile raspberry puree that can be used as a coulis, mixed with lemonade or soda water as a drink or simply as an ice cream topping.

    Serves: 4 

    • 500g fresh raspberries
    • 1 teaspoon vanilla sugar (more or less depending on the berries)

    1. Wash the raspberries then add them into a blender and mix for one minute.
    2. Pour the mixture into a fine strainer over a bowl.
    3. The raspberry juice will drip into the bowl. Only use the juice and discard the seeds left.
    4. When done add the vanilla sugar to the juice.
    5. Mix and serve chilled.
