This is a versatile raspberry puree that can be used as a coulis, mixed with lemonade or soda water as a drink or simply as an ice cream topping.
500g fresh raspberries
1 teaspoon vanilla sugar (more or less depending on the berries)
- Wash the raspberries then add them into a blender and mix for one minute.
- Pour the mixture into a fine strainer over a bowl.
- The raspberry juice will drip into the bowl. Only use the juice and discard the seeds left.
- When done add the vanilla sugar to the juice.
- Mix and serve chilled.
