Vanilla Fig Jam

    Long after fig season is over you can remember it with this luscious jam that can be enjoy throughout the year.

    Serves: 60 

    • 1kg figs, washed and diced
    • 700g caster sugar
    • 2 lemons, juice only
    • 1 vanilla bean, halved

    1. Mix all the ingredients in a jam pan or a large saucepan and marinate overnight.
    2. The next day cook the jam over low heat for 40 minutes after it starts boiling. Remove the vanilla bean, scrape the seeds and add them to jam. Mix well.
    3. Fill the jars (previously boiled in hot water), wipe the edges of the jars and close them tightly.
