Pamela's Little Almond Cakes

    A light and easy almond friand / cake recipe with rosewater icing. Perfect for morning tea, afternoon tea or dessert. Use a friand tin if you have one otherwise a muffin tin is fine.

    Makes: 24 Friands

    • 1/2 cup self-raising flour
    • 3/4 cup almond meal (ground almonds)
    • 1/2 cup caster sugar
    • 75g melted butter
    • 2 tablespoons milk
    • 1 egg
    • Rosewater Icing
    • 2 cups icing sugar
    • 2½-3 tablespoons water
    • 1/2 teaspoon rosewater
    • 1-2 drops pink food colouring
    • dried rose petals to serve

    1. Preheat the oven to 160C.
    2. Place flour, almond meal and sugar in a bowl and stir to combine. Add butter, milk and egg and stir to combine.
    3. Spoon mixture into two lightly greased 12-hole, 1½ tablespoon capacity muffin tins. Bake for 10 minutes or until cooked when tested with a skewer. Turn onto wire racks.
    4. To make rosewater icing, place icing sugar, rosewater, water and pink food colouring in a bowl and stir until smooth. Drizzle icing over cakes.

    yummy was easy to make and one that is good to get the kids to help,learn and have fun...we never had the rose water so we just had vanilla.  -  21 Jun 2013
