Warm Tangy Potato Salad

    Who needs cold potato salad? This one is quick to make and served warm it is an ideal side option at a barbecue.

    Serves: 10 

    • 2 kg waxy potatoes
    • 1 small onion, finely diced
    • 1 cup (250ml) concentrated stock, made of powdered beef stock
    • 5 tablespoons vinegar
    • 2 tablespoons oil
    • 1 pinch salt, to taste
    • 1 pinch sugar, to taste
    • 1 pinch salt and pepper, to taste
    • chives, diced, to serve

    1. Boil the potatoes in a large saucepan until soft. Drain and let cool slightly. Peel while still warm and cut into thin slices.
    2. In a small bowl stir the hot stock with oil, vinegar, salt and sugar.
    3. Put the warm potato slices in a salad bowl then toss with the onion then pour the hot stock over them. The potatoes should still be warm so they absorb the liquid better.
    4. Leave to stand for 5 minutes and season with salt and pepper. If desired, sprinkle with chives to serve.

    This turned out really well and better than expected! I did not use any extra salt, oil and sugar. I fried the onions before adding to the potatoes. It was a lovely salad to have with German brats.  -  23 Jul 2013  (Review from Allrecipes UK & Ireland)
