Stir Fried Turkey with Pineapple and Bean Sprouts

I love a quick cooked wok stir fry dish and this turkey and pineapple one is great. Sometimes I marinade the turkey before going to work and prep the vegetables so all I have to do when I get home is cook.


Serves: 2 

  • 300g turkey breast
  • Marinade
  • 1cm of ginger, finely diced or 1 teaspoon ginger powder
  • 2 tablespoons soy sauce
  • 1 pinch salt or freshly ground black pepper, to taste
  • 1 pinch chilli powder, to taste
  • 1 clove garlic, crushed
  • Stir Fry
  • 3 slices pineapple, preferably fresh
  • 2 tablespoons oil
  • 150g fresh bean sprouts
  • 2 tablespoons soy sauce, to taste
  • 1 bunch chives

  1. Wash, dry and slice the turkey evenly.
  2. Marinade: Combine the ginger, soya sauce, salt, pepper, chilli powder and garlic. Roll the meat in the marinade, leave in the fridge for an hour.
  3. Stir Fry: Peel the pineapple slices, cut out the hard stem from the middle then cut into pieces.
  4. Heat the oil in a large wok or frying pan and stir fry the turkey briefly. Stir in the pineapple pieces.
  5. Rinse the bean sprouts in a sieve under running water, drain and add to the wok and stir fry continuously.
  6. Season the turkey and pineapple with soya sauce. Sprinkle with chives to serve.
