Strawberry Cream Pie

This is a wonderful cream pie using a combination of cream cheese and crème fraiche then topped with fresh strawberries.


Serves: 10 

  • Pastry
  • 1 3/4 cups (220g) flour
  • 1/3 cup (90g) sugar
  • 150g butter or margarine, diced
  • 2 egg yolks
  • 1 lemon, zested
  • 1 pinch salt, to taste
  • Filling
  • 100g cream cheese
  • 250ml crème fraiche
  • 4 tablespoons sugar
  • 1/2 teaspoon vanilla essence
  • 1 pinch salt, to taste
  • Fruit Filling
  • 500g strawberries, sliced

Preparation:15min  ›  Cook:20min  ›  Extra time:30min resting  ›  Ready in:1hour5min 

  1. Fruit Filling: Spread the strawberries over the filling.
  2. Pastry: All knead the pastry ingredients to a short crust pastry and leave for 30 minutes in the refrigerator.
  3. Heat the oven to 180 degrees C. Butter a round baking tin and sprinkle with flour.
  4. Roll out dough on a lightly floured work surface into a circle and lay it in the prepared tin. Bake for 20 minutes in the preheated oven. Remove from the oven and allow to cool.
  5. Filling: Mix all of the filling ingredients well and spread over the cooled pastry.
