In a cup add the yeast then sprinkle with a pinch of sugar and add a tablespoon of warm milk. Cover and let rest approximately 15 minutes in a warm place.
Heat the butter and milk in a saucepan over low heat until melted.
In a large mixing bowl, combine the flour, yeast mixture, milk and butter mixture, almonds, crystallised peel, salt, sugar and egg yolks. Mix until a soft dough forms then fold in the sultanas. Cover bowl and let stand in a warm place about 1 hour or until the dough has risen to twice the original size.
Shape dough into a loaf then place on a baking tray lined with baking paper. Bake in the oven at 120 degrees C for about 30 minutes.
After baking brush with 2 tablespoons melted butter then serve warm. Or wait to cool then add your favourite icing.
