    Stollen is a traditional German bread that usually eaten during the Christmas season; it is packed with sultanas, almonds and crystallised fruit.

    Serves: 15 

    • 3 (15g) packets yeast
    • 1 teaspoon caster sugar
    • 1 tablespoon lukewarm milk
    • 1 1/2 cups (375ml) milk, lukewarm
    • 250g butter
    • 1kg plain flour
    • 600g mixed fruit
    • 1/2 teaspoon salt
    • 200g sugar
    • 2 egg yolks
    • 2 tablespoons melted butter

    1. In a cup add the yeast then sprinkle with a pinch of sugar and add a tablespoon of warm milk. Cover and let rest approximately 15 minutes in a warm place.
    2. Heat the butter and milk in a saucepan over low heat until melted.
    3. In a large mixing bowl, combine the flour, yeast mixture, milk and butter mixture, almonds, crystallised peel, salt, sugar and egg yolks. Mix until a soft dough forms then fold in the sultanas. Cover bowl and let stand in a warm place about 1 hour or until the dough has risen to twice the original size.
    4. Shape dough into a loaf then place on a baking tray lined with baking paper. Bake in the oven at 120 degrees C for about 30 minutes.
    5. After baking brush with 2 tablespoons melted butter then serve warm. Or wait to cool then add your favourite icing.
