    This is a delicious banana cake with a slight chocolate overtone and spices in the form of cinnamon and cloves.

    Serves: 12 

    • 250g margarine or butter
    • 1 1/4 cups (250g) caster sugar
    • 3 eggs
    • 50g dark chocolate
    • 1 teaspoon cinnamon
    • 2 teaspoons cocoa
    • 1/2 teaspoon ground cloves
    • 4 bananas
    • 1 teaspoon bicarbonate soda
    • 2 1/2 cups (310g) plain flour
    • 5 teaspoons baking powder

    1. Grate in the dark chocolate then add with the cinnamon, cocoa and ground cloves to the mixture and stir.
    2. Preheat oven to 180 degrees C and grease a springform cake tin.
    3. Beat the margarine and sugar until fluffy then add the eggs one by one; beating after each addition.
    4. Peel the bananas, mash them with a fork and sprinkle with a little bicarbonate soda so they don't turn brown.
    5. Add the mashed bananas to the margarine-egg mixture. Combine the flour and baking powder then stir into the cake mixture.
    6. Pour cake mixture into the prepared tin then bake in the preheated oven for about 1 hour.
    7. Allow the cake to cool and decorate as desired.
