Winter Rum Punch

    This is a great cold weather punch containing tea, lemons, orange, honey, cognac and rum. It needs to infuse for three hours so prepare it before your friends arrive then heat and serve when required.

    Serves: 4 

    • 2 oranges
    • 3 lemons
    • 1/2 cup (125ml) Cognac
    • 2 teaspoons loose black tea or 2 tea bags
    • 150g honey
    • 1 cup (250ml) dark rum

    1. Wash and dry the orange and peel it in a very thin spiral.
    2. Squeeze both the oranges and the lemons. Mix the juice, cognac and orange peel in a saucepan, cover then leave to infuse for 3 hours.
    3. Brew tea with boiling water and leave for 3-5 minutes. Add with the rum and honey to the saucepan. Remove the orange peel.
    4. Heat punch thoroughly but do not boil. Serve immediately in glass mugs.
