Mushrooms and Tomato Fry Up

    Fry up isn't just for sausages and bacon it works great with mushroom and tomatoes too. Serve with slices of toasted ciabatta.

    Serves: 4 

    • 500g large tomatoes
    • 4 cloves garlic
    • 1/2 cup (125ml) oil
    • 500g large white mushrooms, sliced
    • 1 bunch flat leaf parsley, finely diced
    • 1 bunch basil, finely diced
    • 1 tablespoon small capers
    • 1 pinch salt and freshly ground black pepper, to taste
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • lemon wedges as a garnish, optional

    1. Peel the tomatoes, cut the stem out, slice and lay in a single layer on paper towel.
    2. Peel the garlic and cut it into slices. Heat the oil in a frying pan and fry the garlic. Lay on paper towel.
    3. In the same frying pan fry the mushrooms in the garlic oil in batches (2-3 minutes on each side) and also place on the paper towel.
    4. Arrange the mushrooms and tomatoes in a bowl. Sprinkle with garlic, capers, parsley and basil.
    5. Season with salt and pepper then drizzle with olive oil and lemon juice. Toss and serve.
