If you can get palm hearts this is a great salad recipe that also uses avocado and hardboiled eggs. The dressing is homemade with sunflower oil, lemon juice and mustard.


Serves: 4 

  • 4 ripe avocados, diced
  • Salad
  • 2 tins (800g) palm hearts, cut into 1cm thick slices
  • 2 hard-boiled eggs, diced
  • 4 spring onions, diced
  • 1 red capsicum, finely diced
  • 1 bunch coriander, diced
  • Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons sunflower oil
  • 1/2 tablespoon lemon juice
  • 1 tablespoon mustard
  • 1 tablespoon vinegar
  • To Serve
  • 1 pinch salt and pepper, to taste

  1. Salad: Mix avocado, palm hearts, egg and spring onions in a mixing bowl.
  2. Dressing: Stir olive oil, sunflower oil, lemon juice, mustard and vinegar together. Season with salt and pepper and pour over the salad.
  3. To Serve: Sprinkle the capsicum and coriander over the salad.
