Mustard Devillled Eggs

    I love to eat eggs for some no-meat protein but can get bored with the normal ways of cooking them. These mustard flavoured stuffed eggs are great.

    Serves: 4 

    • 4 hard boiled eggs
    • 1 tablespoon mayonnaise
    • 1 teaspoon mustard
    • 1 pinch salt and ground black pepper, to taste
    • 1 pinch sugar, to taste
    • 1 teaspoon chives, finely diced
    • 1 tablespoon lemon juice

    1. Peel and halve the eggs. Carefully remove the yolks and press through a fine sieve.
    2. Mix with mayonnaise and mustard. Stir in chives and season with salt, pepper, sugar and lemon juice.
    3. Fill a plastic sandwich bag with the mixture, cut off a corner and pipe into the egg halves. Top with chives to serve.
