    This is a beautiful Russian apple cake where the apples are grated then soaked in rum before being added to the batter containing nuts, vanilla and cinnamon.

    Serves: 12 

    • 40ml rum
    • 5-6 apples, grated
    • 250g butter
    • 1 cup (250g) sugar
    • 1 teaspoon vanilla essence
    • 3 eggs
    • 2 cups (250g) flour
    • 1 tablespoon baking powder
    • 3 tablespoons cocoa
    • 1 tablespoon cinnamon
    • 125g ground or finely diced nuts

    1. Pour the rum over the grated apples and allow to infuse for 30 minutes.
    2. Preheat the oven to 190 degrees C. Grease a springform cake tin.
    3. Beat butter until fluffy. Stir in sugar, vanilla and eggs. Mix flour and baking powder then gradually mix into the dough with the cocoa, cinnamon and nuts.
    4. Fold the apples into the dough and pour into the prepared cake tin. Bake in the preheated oven for about 60 minutes.
