Almond Topped Butter Cake

    This is an easy cake to make taking only 20 minutes to bake. The basic butter cake base is covered in a slivered almond and vanilla mixture creating a wonderful sweet finish.

    Serves: 1 

    • Cake Mix
    • 1 cup (250ml) cream
    • 1 cup (250g) sugar
    • 1 teaspoon vanilla essence
    • 4 eggs
    • 1 pinch salt, to taste
    • 1 untreated lemon, zested
    • 2 1/2 cups (310g) flour
    • 1 tablespoon baking powder
    • Topping
    • 125g butter, at room temperature
    • 1 cup (220g-250g) sugar, to taste
    • 1 teaspoon vanilla essence
    • 4 tablespoons milk
    • 200g slivered almonds

    1. Spread the dough on the prepared baking tray and bake in the preheated oven for 10 minutes.
    2. Preheat oven to 200 degrees C and grease a baking tray with butter and dust with flour.
    3. Whisk the cream with a hand mixer then stir in the sugar, vanilla, eggs, salt and lemon zest; mix until well combined.
    4. Mix the flour with the baking powder and fold into the mixture then stir with the spatula.
    5. While the cake bakes stir sugar and butter until creamy then mix in the vanilla and milk. Fold in the almonds.
    6. After 10 minutes take the cake from the oven and spread the topping over it evenly. Return to the oven and bake for a further 10 minutes.
    7. Let it cool and cut into pieces.
