This is a super easy peach cake that uses tinned peaches and a basic cake batter. I like to make it on quiet weekends for a warm treat and then eat the leftovers in packed lunches.


Serves: 10 

  • 1 (800g) tin peaches
  • 2 tablespoons cherry brandy
  • 4 tablespoons lemon juice
  • 100g margarine
  • 1 pinch salt, to taste
  • 1 lemon, zested
  • 1/3 cup (90g) sugar
  • 2 eggs
  • 2 cups (250g) flour
  • 1 teaspoon baking powder
  • icing sugar or cinnamon for sprinkling

  1. Bake in the preheated oven for about 50 minutes.
  2. Drain the peaches in a sieve. Drizzle with cherry brandy and lemon juice then leave to infuse.
  3. Preheat oven to 225 degrees C and grease a springform tin.
  4. Stir the margarine until fluffy. Add salt and lemon zest then gradually stir in the sugar and eggs.
  5. Mix the flour with baking powder and mix the lemon and cherry brandy into the mixture.
  6. Put the dough into the prepared springform tin and spread the drained peaches over it. Sometimes I cut the peaches and arrange them in a pattern on the dough.
  7. Sprinkle the finished cake with icing sugar or cinnamon.
