Balsamic Vegetarian Pasta

    Use any pasta you like and garnish with some fresh parsley or basil. Balsamic vinegar and feta add extra flavour.

    Serves: 8 

    • 1 (500g) pack wholemeal spaghetti
    • 3 tablespoons olive oil
    • 5 cloves garlic, finely chopped
    • 3 large tomatoes, diced
    • 1 red onion, chopped
    • 1 yellow capsicum, chopped
    • 1 red capsicum, chopped
    • 1 medium zucchini, chopped
    • 50g fresh mushrooms, sliced
    • 2 tablespoons balsamic vinegar
    • 125g crumbled feta cheese

    1. Cook pasta according to pack instructions; drain.
    2. Heat the oil in a frying pan over medium heat, and sauté the garlic until lightly browned. Mix in the tomatoes, onion, capsicums, zucchini and mushrooms. Cook and stir until tender.
    3. Mix the balsamic vinegar into the frying pan. Toss with the cooked spaghetti and sprinkle with feta cheese to serve.

    Used different ingredients. Great EASY recipe for all those fresh garden vegetables (with a few changes). I added oregano, basil, parsley, ground red pepper, red capsicum flakes, salt, and pepper. Without the spices it was bland. I used whole wheat penne pasta instead of spaghetti.  -  29 Sep 2008


    Good basic recipe which could be made great with the addition of some seasoning like oregano, basil, s&p or maybe something a little spicier like a sprinkle of red capsicum flakes. I would also julienne the vegetables instead of chopping them.  -  29 Sep 2008


    Altered ingredient amounts. Quick and delicious dinner! This dish is perfect for summer. I did not use mushrooms (allergy); I only used half of a red onion and two tomatoes, and I added a sprinkle of basil, oregano, and red capsicum flakes.
