Preserved Plums in Wine and Spices

A beautiful and simple way to preserve plums when they are in season. Serve them with ie cream or even over pancakes and waffles.


Serves: 20 

  • 2 litres red wine
  • 400g sugar
  • 2kg plums
  • cinnamon sticks
  • whole cloves

Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Heat the red wine in a saucepan but do not boil. Dissolve the sugar in it completely. Add the washed whole plums with stones still inside. Heat over a medium heat never allowing it to boil.
  2. Add a cinnamon stick and a clove to each jar. Pour in the compote while still hot and close the jars immediately.
  3. Store in a cool place and leave for a few weeks to infuse.
