Roasted Pork Loin

    This is a beautiful tender roast of a great cut of meat. You may need to go to your butcher and get it before it is sliced, it will be worth the effort.

    Serves: 8 

    • 1 pork loin
    • 2 tablespoons sugar
    • 1 1/4 tablespoons sea salt
    • 1 tablespoon black pepper
    • 1 tablespoon dried oregano
    • 2 teaspoons coriander powder
    • 1 teaspoon ground cloves
    • 100ml maple syrup
    • 100ml water

    1. Place in a roasting tin just big enough to fit the pork loin. Pour the maple syrup over the pork loin and pour water into the roasting tin around the meat.
    2. Leave to roast for 10 minutes then baste with the roasting juices. Roast for another 25 minutes until the meat is cooked through.
    3. Mix all spices together and rub the pork loin with it. Wrap in plastic wrap and leave overnight in the refrigerator.
    4. The next day, preheat the oven to 180 degrees C.
    5. Heat the olive oil in a large frypan until very hot but don't allow it to burn. Sear the pork loins on all sides for 3-5 minutes.
    6. Remove from the oven and stand for 10 minutes. Then cut into slices and serve with the gravy.
