Pears Poached in Ginger Syrup

These pears are slowly poached in a ginger syrup until beautiful and tender. Serve warm with ice cream or whipped cream.


Serves: 6 

  • 2 1/2 litres water
  • 1 1/4 cups (310g) sugar
  • 2 cinnamon sticks
  • 1cm square of ginger
  • 6-8 hard pears
  • 2 lemons, juiced

  1. Bring water and sugar to the boil in a large saucepan. Cut the ginger into 8 thin strips. Add the cinnamon stick and ginger then cook uncovered for 30 minutes over a low heat.
  2. Peel the pears and rub in some lemon juice immediately so that they don't go brown. Cut in half and remove the core.
  3. Add the pears and the remaining lemon juice to the syrup and simmer for 25-30 minutes until the pears can be stabbed easily with a knife.
  4. Remove the pears from the syrup and set aside.
  5. Pour syrup through a sieve and return in the saucepan. Bring to the boil until reduced and syrup-like.
  6. Pour syrup on the pears and serve warm.
