Pear and Clove Cake

    I love easy cakes and this is definitely one; using fresh or tinned pears in a basic cake batter it is great warm as a dessert with ice cream or cold sliced.

    Serves: 8 

    • 20g butter, to grease tin
    • 20 breadcrumbs, to line tin
    • 2 eggs
    • 60ml milk
    • 200g sugar
    • 1 pinch salt, to taste
    • 1 3/4 cups (225g) plain flour
    • 1 pinch ground cloves, to taste
    • 1kg fresh pears (or 850g tinned)
    • 30g butter

    1. Preheat the oven to 190 degrees C. Grease a 23cm cake tin and sprinkle it with breadcrumbs. Tip the pan upside-down over the sink and shake off any excess breadcrumbs.
    2. Whisk the eggs and milk then add in the sugar, salt, flour and cloves until a smooth mixture is formed.
    3. Peel and core the pears. Cut the pears into slices and use a spatula to fold them into the cake mixture.
    4. Spoon the cake mixture into the prepared tin, spread it out with the spatula and smooth it out.
    5. Drop small pieces of butter over the cake. Bake in the preheated oven for 50 minutes until the cake is lightly browned on top.

    A really nice cake. I used fresh pears but I didn't have cloves, so added a little cinnamon. The cake needed an extra 10-15 minutes in addition to the 50 minutes for it to cook through, and to brown the top.  -  11 Apr 2011
