Panna Cotta with Yoghurt

This is a great pannacotta that is easy to make and a bit healthier than the traditional version as some of the cream is substituted with yoghurt.


Serves: 6 

  • 10g gelatine
  • 1 cup (250ml) cream
  • 350g natural yoghurt
  • 1 cup (250ml) milk
  • 1/3 cup (60g) icing sugar

  1. Soften the gelatine in two tablespoons of hot water.
  2. Stir cream and yoghurt together.
  3. Heat milk in a small heavy based saucepan with the icing sugar. Once the milk is bubbling remove from the heat.
  4. Stir the gelatine into the milk and whisk until it has completely dissolved.
  5. Stir the milk and gelatine mixture into the creamy yoghurt.
  6. Grease a ceramic or glass pie dish with neutral-tasting oil and pour the mixture into it. Cover with plastic wrap and place in the fridge for several hours or overnight until the mixture has set.
  7. Remove from the fridge 30 minutes before serving. If desired you can carefully tip the pannacotta onto a large serving plate and garnish with fruit.
