Apple Pancake

    Pancakes that have the apple in them not on them. We love to eat these on a slow weekend morning for brunch.

    Serves: 4 

    • 4 eggs
    • 3 cups (750ml) milk
    • 1/3 cup (90g) sugar
    • 3 cups (400g) wholemeal flour
    • 1 pinch salt, to taste
    • 2-3 apples, julienned
    • 20g butter, for the pan
    • 30g icing sugar, for dusting, optional

    1. Stir eggs, milk, salt, sugar and flour to a smooth batter. Lastly, add the apple pieces.
    2. Heat butter in a medium-sized frypan then pour in about 4 tablespoons of the batter. Swirl the frypan to distribute the batter evenly.
    3. Fry the batter over a medium to high heat until the edge begins to get dark. Flip the pancake and fry the other side the same.
    4. Keep the pancakes warm in the oven as you cook the rest of the batter. Dust with icing sugar before serving.
