Crumbed Zucchini


    Zucchini is crumbed and fried in oil or butter to create a versatile vegetable bite. They can be served as a side dish, a vegetarian main, finger food served with dip or just a snack.

    Serves: 2 

    • 500g zucchini
    • 1 clove garlic, halved
    • 4 tablespoons flour
    • 1 egg
    • 4 tablespoons breadcrumbs
    • 20g oil or butter

    1. Cut the zucchini into slices. Rub both sides with the garlic.
    2. Place flour, egg and breadcrumbs into three separate bowls.
    3. Press the zucchini slices first in flour (shake off excess flour), then in the egg and finally in the breadcrumbs.
    4. Heat oil in a frying pan then cook zucchini slices until golden brown on both sides.
