Zucchini is crumbed and fried in oil or butter to create a versatile vegetable bite. They can be served as a side dish, a vegetarian main, finger food served with dip or just a snack.
1 clove garlic, halved
4 tablespoons flour
4 tablespoons breadcrumbs
20g oil or butter
- Cut the zucchini into slices. Rub both sides with the garlic.
- Place flour, egg and breadcrumbs into three separate bowls.
- Press the zucchini slices first in flour (shake off excess flour), then in the egg and finally in the breadcrumbs.
- Heat oil in a frying pan then cook zucchini slices until golden brown on both sides.
