There is nothing like a homemade salad dressing and this is one of my favourites. Olive oil and white wine vinegar are infused with garlic, parsley, capers and olives.


Serves: 10 

  • 5 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 3 to 4 tablespoons water
  • 1 clove garlic, crushed
  • 4 sprigs parsley, finely diced
  • 25g capers, drained and diced
  • 25g black olives, pitted and diced
  • 1 pinch salt and pepper, to taste

  1. Mix together the olive oil, vinegar and water then season with salt and pepper.
  2. Add the garlic, parsley, capers and olives and mix well.
